HEARTS OF PALM SALAD WITH AVOCADO a Great Aventure For #SundaySupper

What an amazing #SundaySupper we have this week, I feel very honored and excited because the company Merrell joins us around the family table.
I want to tell you that this recipe is inspired by the beautiful mountains of Costa Rica where for a long time my family and I went camping. Costa Rica is an exotic country that has the most incredible landscapes, mountains, beaches, parks, rainforests, and wonderful people.
As part of our tradition, the meals included in the Hearts of Palm, the product produced by the Palm. We use it to prepare a wide variety of dishes, but especially when we want to enjoy the beautiful scenery and fresh air.
When we came to the United States my husband and I realized even more the importance of inculcating in our children the family dinner, since being in Costa Rica we used to go to a family member's house for dinner.
This is one of the most important traditions passed down generation to generation and when your family is so far away means even more.
It is super special for me to share this recipe as it is very attached to my roots and represents 100% of the versatility and beauty that the country has.
And in my family transmits the love and warmth every time we sit around the family table.

INGREDIENTS

  • 4 ripe avocados
  • 1 head romaine lettuce, chopped
  • 2 cups chopped papaya
  • 1 can of 14.5 oz Hearts of Palm
  • juice of 1 lemon
  • 1 tablespoon agave nectar
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • 3 tablespoons of chopped fresh cilantro
  • salt and pepper to taste

DIRECTIONS

Cut avocados in half, remove seeds and peel, sprinkle with a little lemon juice.
Drain the can hearts of palm and cut into slices, stir gently with the papaya, cut the lettuce into pieces.

In a bowl make the vinaigrette, stirring, agave nectar, lemon juice, mustard, olive oil, salt and pepper, stir well until well blended.

In order to serve
On a plate place a cup of lettuce, one avocado half and 3 tablespoons of the mixture of Hearts of Palm with papaya, sprinkle a tablespoon of the dressing over and garnish with chopped cilantro.

This recipe makes 8 servings.

NUTELLA COCONUT COOKIES

Nothing better to add some sweet to your life then cookies. For example my nutella cookies with coconut, delicious flavor of chocolate with hazelnuts and coconut, which is an incredible explosion of taste in your mouth.
Completely different and delicious, a combination that you did not expected.
These cookies are ideal for preparing ice cream sandwich, or with a good cold glass of milk.
Either way they are delicious, the most important thing is to prepare them and enjoy and these cookies will be a hit at home.

INGREDIENTS
  • 1 stick of unsalted butter at room temperature
  • 1 cup of sugar
  • 1 cup of flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon coconut extract
  • 3/4 cup grated coconut
  • 1/2 cup of Nutella
  • pinch of salt
DIRECTIONS

Preheat oven to 350 degrees F (176 degrees C).

Cream butter with sugar until it turns a light yellow, add the Nutella and coconut extract. In a bowl mix flour, baking powder, pinch of salt and grated coconut, add to above mixture.

Beat until mixture forms a ball, about 3 minutes. Roll into balls and place on a tray, bake for 10 minutes.

Once they are ready, place on a rack to cool completely, store in an airtight container.

This recipe makes 20 cookies..

Preparation time: 20 minutes
Cooking time: 10 minutes

INGREDIENTES
  • 1 barra de mantequilla sin sal a temperatura ambiente
  • 1 taza de azúcar
  • 1 taza de harina
  • 1 cucharadita de polvo de hornear
  • 1/4 cucharadita de extracto de coco
  • 3/4 taza de coco rallado
  • 1/2 taza de Nutella
  • pizca de sal
PREPARACION

Precaliente el horno a 350 grados F ( 176 grados C ).

En la batidora creme la mantequilla con el azúcar, deje batir hasta que tome un color amarillo claro, agregue la nutella y el extracto de coco.
En un tazón mezcle la harina, polvo de hornear, pizca de sal y coco rallado, agregue a la mezcla anterior.

Bata hasta que se forme una bola, aproximadamente 3 minutos. Forme bolitas y coloque en una bandeja, hornee por 10 minutos.

Cuando esten listas, coloque en una rejilla a que se enfríen completamente, almacene en un contenedor hermético.

De esta receta salen 20 galletas.

HEALTHY SPINACH FRITTERS

Here I give you this option very healthy to enjoy anytime of the day.
Delicious spinach fritters and do not be fooled by the name, because in fact are not fried at all.
I always try to offer healthier options without affecting the flavor of the meals, so I'm completely convinced that these fritters will be a success even with the children.
Vegetarian, gluten free, a perfect appetizer for a party.
I hope you enjoy.

INGREDIENTS
  • 1 package of frozen spinach
  • 2 eggs 3/4 cup masa flour
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Italian herbs
  • 1/4 teaspoon of nutmeg
  • 1/4 cup of parmesan cheese
  • salt and pepper to taste
  • Cooking spray
DIRECTIONS

Place spinach in a bowl, soak a kitchen towel and place over defrost in the microwave for 5 minutes. Cool and add remaining ingredients mix until everything is well incorporated.

Heat a skillet over medium heat and spray with cooking spray, form patties and cook for 4 minutes each side or until golden brown.

Serve immediately.

This recipe makes 8 fritters.

Aquí les dejo esta opción muy saludable y deliciosa, para que disfruten a cualquier hora del día.
Deliciosas frituras de espinaca, no se dejen enganar por el nombre, porque en realidad no se fríen, trato siempre de ofrecerles opciones mas saludables sin afectar el sabor de las comidas, por eso estoy completamente convencida de que estas frituras serán un éxito hasta con los ninos.
Vegetarianas, libres de gluten, un aperitivo o acompañamiento ideal para una fiesta.

INGREDIENTES
  • 1 paquete de espinaca congelada
  • 2 huevos
  • 3/4 taza de masa harina
  • 1 cucharadita de ajo en polvo
  • 1 cucharadita de hiervas italianas
  • 1/4 cucharadita de nuez moscada
  • 1/4 taza de queso parmesano
  • sal y pimienta al gusto
  • Spray de cocina
PREPARACION

Coloque la espinaca en un tazon, humedezca una toalla de cocina y coloque encima, lleve al microondas por 5 minutos para que se descongele.
Deje enfriar y agregue el resto de los ingredientes mezcle hasta que todo quede bien incorporado.

Caliente una zarten a fuego medio y rocie con spray de cocina, forme tortas y cocine por 4 minutos a cada lado o hasta que doren bien.

Sirva de inmediato.

De esta receta salen 8 frituras.

SWEET AND SOUR SAUCE

This delicious sauce is the perfect accompaniment for any occasion.
It is very easy to make and the flavor is unique and delicious, you will find different brands on the market that offer this type of sauce, but do it at home is much better.
It is widely used in Asian food dishes, where the acid and the sweet flavor come together to form the perfect marriage.
This sauce is a favorite in my family and we have enjoyed in countless meals.
Ideal with snacks at parties.
If you want your kids to eat even more vegetables, replacing the traditional with the sweet and sour sauce, they will love the taste.
I hope you try and enjoy this sauce is delicious on everything you want.

INGREDIENTS
  • 1 can of pineapple chunks 15 oz
  • 2 cups of ketchup
  • 1/2 cup of pineapple juice
  • 3 tablespoons of apple cider vinegar
  • 3 tablespoons of agave nectar
DIRECTIONS

In a saucepan over low heat place all ingredients, stir well, cover the pot and simmer for 5 minutes.

Cool completely and store in an airtight container in refrigerator up to one week.

This recipe makes 4 cups of sweet and sour sauce.

INGREDIENTES
  • 1 lata de pina en trozos de 15 onzas
  • 2 tazas de Ketchup
  • 1/2 taza del jugo de la pina en trozos
  • 3 cucharadas de vinagre de manzana
  • 3 cucharadas de Agave nectar.
PREPARACION

En una olla a fuego bajo coloque todos los ingredientes, revuelva bien, tape la olla y deje hervir por 5 minutos.

Deje enfriar completamente y guarde en un contenedor hermético en el refrigerador hasta por una semana.

De esta receta salen 4 tazas de salsa agridulce.

BEANS AND CHEESE QUESADILLA WITH TOMATO SALAD #SundaySupper with Katie Workman100

This week we are honored to celebrate again #SundaySupper with Katie Workman100 cookbook. Among the many recipes the you can make with this book, this week we are focused on quesadillas and pizzas, because who does not like to enjoy a dish so easy and delicious as this from time to time.
So this week we shared with you a lot of ideas to enjoy with your family.
I am sharing this delicious recipe is very easy to make and suitable for a picnic, or a long trip, easy to carry and very healthy, served with a simple tomato salad, full of flavor.
Beans are a major source of protein and calcium, essential in the children, and if your child does not like beans will love this combination.

INGREDIENTS
  • 8 medium flour tortillas
  • 1 cup cooked black beans
  • 1 cup shredded mozzarella cheese
  • 3 Roma tomatoes, chopped
  • 1 English cucumber, chopped
  • 1/2 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper to taste
  • Cooking spray
DIRECTIONS

Heat beans and mash slightly with a fork.
Add 2 tablespoons of beans in the middle of the tortilla and sprinkle a tablespoon of cheese, fold the other half of tortilla.
Heat a skillet and spray with cooking spray, place the quesadilla and cook until cheese melts and tortilla is golden brown on both sides, about 3 minutes on each side.

Tomato Salad:
Place tomatoes, cucumber, cilantro, lemon juice, salt and pepper, stir well and refrigerate for at least 20 minutes.

Cut the quesadilla in half and serve with tomato salad.

This recipe makes 8 quesadillas.

LOW FAT STRAWBERRY ICE CREAM

If you like strawberry ice cream you will love this version.
Low in fat and sugar delicious for those hot afternoons, and you can enjoy with your family.
It is also an option for people who are lactose intolerant.
I am looking for healthier options with lots of flavor, that allow me to enjoy with my family on summer afternoons.
With this same recipe you can create different flavors, using seasonal fruits.
Simple to make and you don't need of an ice cream maker for this recipe, a 4 ingredients ice cream sounds good to me.
This is a different way to enjoy ice cream, something delicious without feeling guilty when you eat, the best is completely homemade and 100% made with fresh fruit.
Enjoy it.

INGREDIENTS
  • 3 cups strawberries, washed and cut in half
  • 1/4 cup of sugar
  • 3 tablespoons of water
  • 1 can of nonfat evaporated milk of 14.5 oz
DIRECTIONS

The night before freeze the can of evaporated milk and remove from freezer 1 hour before starting the preparation.
In a small saucepan over medium heat place the strawberries, sugar and water, let it cook for five minutes, remove from heat and allow to cool completely.

Place evaporated milk in the mixer and whisk until doubled in volume, add cold strawberries and stir to incorporate well.

Place in a plastic container and freeze for 3 hours.
 
When ready, serve ice cream with fresh fruit and fat-free strawberry syrup.

This recipe makes 12 ice cream cones or 6 cups of ice cream.

  • 3 cucharadas de agua
  • 1 lata de leche evaporada sin grasa de 14.5 onz
PREPARACION

Congele la lata de leche evaporada desde el dia anterior y saque del congelador 1 hora antes de iniciar la preparación.
En una olla pequeña a fuego medio coloque las fresas, agua y azúcar, deje que se cocinen por cinco minutos, retire del fuego y espere a que enfríen completamente.

Coloque la leche evaporada en la batidora y bata hasta que duplique el volumen, agregue las fresas frias y revuelva para que se incorporen bien.

Coloque en un recipiente de plastico y congele por 3 horas.

Cuando este listo disfrute acompañando el helado de frutas frescas y sirope de fresa sin grasa ni azúcar.

De esta recetas salen 12 conos de helados o 6 copas de helados.

SIMPLE WHITE RICE

This is the basic recipe of how to prepare a delicious white rice.
It's amazing how many people prefer to buy the rice cooked and do not realize how easy and delicious it is to make it at home.
No need for magic tools, all you need are some simple steps to make the white rice always comes out perfect.
This rice is the foundation for a lot of recipes you can make a full meal, simple, delicious and healthy.
I invite you to try this recipe and you'll never buy cooked rice.

INGREDIENTS
  • 2 cups of uncooked long grain rice
  • 1 teaspoon of oil
  • 1 tablespoon minced garlic
  • 2 teaspoons of salt
  • 1/2 cup chopped fresh cilantro
  • 2 1/2 cup of warm water
DIRECTIONS

In a saucepan heat oil over medium heat add the garlic and rice, stir for 5 minutes, this process is called toast the rice, add salt and cilantro stir well.
Add hot water, stir the rice when you incorporate the water.

Cover and reduce heat, simmer for 20 minutes, do not lift the lid of the pot when the rice is cooking. Having completed the 20 minutes, lift the lid and stir with a fork.

Cover the pan, turn off the heat and let rice sit for 10 minutes.

Before serving, stir the rice with a fork again.

Serves 6 people.

  • 2 tazas de arroz de grano largo crudo
  • 1 cucharadita de aceite

  • 1/2 taza de cilantro picado
  • 2 1/2 taza de agua caliente
PREPARACION

En una olla caliente a fuego medio el aceite agregue el ajo y el arroz, revuelva por 5 minutos, a este proceso se le llama tostar el arroz, agregue la sal y el cilantro, revuelva bien.
Agregue el agua caliente, revuelva el arroz mientras incorpora el agua.

Tape la olla y baje el fuego, deje cocinar por 20 minutos, no levante la tapa de la olla cuando el arroz se este cocinando.
Cuando ya hallan pasado los 20 minutos, levante la tapa y revuelva con un tenedor.

Tape la olla, apague el fuego y deje que el arroz repose por 10 minutos.

Una vez pasado el tiempo mueva un poco el arroz con un tenedor y sirva.

Rinde para 6 personas.

RASPBERRY MOUSSE / BEAT THE HEAT FOR #SundaySupper

In those months where the weather invites us to be a bit away from the kitchen there is nothing better than cold desserts.
This week at #SundaySupper we will offer a variety of recipes to enjoy this summer without turning on the stove, an example is this delicious dessert too fast to make and your whole family will enjoy. Summer is one of the seasons of the year to we look forward to, so we have to search fast food options, easy and delicious, so we can enjoy as long as possible with our family.

INGREDIENTS
  • 1 package of sugar free raspberry gelatin of 0.60 oz
  • 1 can condensed milk
  • 1 1/2 cup boiling water
  • 1 cup of ice water
  • 2 cups of very cold heavy cream
DIRECTIONS

In a bowl dissolve gelatin in boiling water, add ice water and condensed milk, mix until everything is well incorporated.
Whip the heavy cream and add to the above mixture, be careful to mix the whipped cream does not fall in volume.
 Pour the mixture in ramequines or cups, and bring to the refrigerator for a minimum of 4 hours.

Once ready, serve immediately.

Preparation time: 25 minutes
Inactive time: 4 hours

BRAIDED BREAD STUFFED WITH PINEAPPLE JELLY

Among the great variety of bread that exists, I personally love this braided bread for my family, which can be filled with a lot of things, herbs, cream cheese, dulce de leche, jellies, etc.
It's delicious and essential in the table at breakfast time.
I usually whenever I visit a girlfriend took some pastry with me, because my grandmother taught me that it's rude to arrive empty-handed, so this type of bread is perfect for such an occasion.
Enjoy this bread re very easy to do and change your mornings with a little something homemade and full of flavor.
Enjoy it.

INGREDIENTS

  • 3/4 cup pineapple jam
  • 1 tube of bread dough ready, brand of 13.2 OZ PILLSBURY
  • 1 egg
  • 1 teaspoon of water
  • 2 tablespoons of flour

DIRECTIONS

Preheat the oven at 350 degrees F (175 degrees C).

Sprinkle the work table with flour and stretch the dough into a rectangle.
In the center of the dough measures 3 in and mark on each side.
Cut 9 strips diagonally to the 2 sides of the dough using a pizza cutter.
Place the pineapple jam in the center and spread the jam carefully.


Start building the braid by placing a strip of dough above the other alternately.

Beat egg with water and brush the braid put on a tray lined with parchment paper and bake for 25 minutes.

This recipe makes one braid bread.

De los panes que mas gustan en mi familia esta el pan trenzado el cual se puede rellenar de una gran cantidad de cosas, hiervas, queso crema, dulce de leche, jaleas, etc.
Es delicioso y esencial en la mesa a la hora del desayuno.
Yo en lo personal acostumbro cada vez que visito a alguna amiga llevo repostería casera porque mi abuela me enseño que es de mala educación llegar con las manos vacías, así que este tipo de panes es perfecto para una ocasión como esa.
Disfrute de este pan relleno, muy facil de hacer y cambie un poco sus mananas con algo casero y lleno de mucho sabor.
Que lo disfrute.

INGREDIENTES
  • 3/4 taza de jalea de pina
  • 1 tubo de masa preparada para pan marca PILLSBURY de 13.2 OZ
  • 1 huevo
  • 1 cucharadita de agua
  • 2 cucharadas de harina
PREPARACION

Precaliente el horno a 350 grados F ( 175 grados C )

Rocie la mesa de trabajo con harina y estire la masa para formar un rectángulo.
En el centro de la masa mida 8 cm y haga una ralla a cada lado.
Corte 9 tiras diagonalmente a los 2 lados de la masa utilizando un cortador para pizza.
Coloque la jalea de pina en el centro y extienda con cuidado.


Empiece a formar la trenza colocando las tiras de masa una encima de la otra alternadamente.

Bata el huevo con el agua y pinte la trenza, coloque en una bandeja forrada con papel encerado y hornee por 25 minutos.
