Place spinach in a bowl, soak a kitchen towel and place over defrost in the microwave for 5 minutes. Cool and add remaining ingredients mix until everything is well incorporated.
Heat a skillet over medium heat and spray with cooking spray, form patties and cook for 4 minutes each side or until golden brown.
Serve immediately.
